Coteaux du Layon

Grape variety: 100% Chenin

Terroir: Alluvial clay and limestone

Vintage: Hand picked, late harvest with careful selection of the grapes.

Winemaking: Gently pressed. The vinification takes place in vats under high supervision. The alcoholic fermentation is stopped to retain 60 to 80gr/l of sugar, depending on the year.

Production: 5 000 bottles.

Tasting: As an aperitif or excellent with foie gras and bitter chocolate desserts.

Food and wine pairing: A pale golden robe. The bouquet has hints of dried fruit which are also found in the taste. This light, sweet wine has a powerfully aromatic palate and yet remains fresh. Serve very chilled.

Guard: Several years.
